Cranberry, orange and walnut cake

    This tea cake is made easy if you use a food processor for the cranberries and nuts.

    Ingredients
    Serves: 24 

    • 175g butter
    • 500g caster sugar
    • 3 eggs, beaten
    • 750g plain flour
    • 1 tablespoon salt
    • 1 1/2 tablespoons baking powder
    • 1 1/2 teaspoons bicarbonate of soda
    • 525ml orange juice
    • 3 tablespoons orange zest
    • 325g chopped cranberries
    • 175g chopped walnuts

    Method

    1. Preheat oven to 180 C / Gas mark 4. Grease three 20x10cm (8x4 in) loaf tins.
    2. Blend together butter, sugar and eggs.
    3. Sift together the flour, salt, baking powder and bicarbonate of soda. Add to wet ingredients, alternating with orange juice.
    4. Mix in the orange zest, cranberries and walnuts. Stir until just combined and pour into prepared tins.
    5. Bake for 30 to 35 minutes or until skewer inserted in centre comes out clean.
