Luxury All Butter Biscuits
These simple, classic biscuits are welcome any time of year. For a festive touch at Christmas, use Christmas-themed biscuit cutters and decorate with icing.
Ingredients
Serves: 48
- 250g butter
- 100g caster sugar
- 1 egg
- 1/2 teaspoon almond extract
- 300g plain flour

- Cream the butter until light. Gradually add the sugar and beat until light and fluffy. Beat in the egg and almond extract.
- Gradually blend in the flour. Cover and chill dough for at least 1 hour.
- Preheat oven to 180 C / Gas mark 4.
- Roll dough out on a lightly floured surface to .25cm thickness. Cut into desired shapes, using lightly floured biscuit cutters. Place biscuits on ungreased baking trays.
- Bake in the preheated oven for 8 to 12 minutes or until golden. Remove to wire racks to cool completely. Decorate as desired.

I found these a bit bland personally. Not enough flavour for my personal liking, but otherwise a great and very easy recipe to make with kids and I'll definitely be experimenting with flavours in this recipe in the near future! - 11 Dec 2009
