    About this recipe: A recipe of my own idea. Its tasty quick and as well as serving it as a side to pasta dishes or with other antipasto. It's really nice in grilled chicken sandwiches!

    Serves: 2 

    • olive oil
    • 3 cloves of garlic, minced
    • 1 packet of cherry tomatoes, halved
    • 1/2 a pack of spinach
    • freshly ground salt and pepper to taste
    • fresh basil to taste

    1. Heat a good glug of olive oil in a frying pan or wok and when hot add the garlic. When the garlic starts to colour add the cherry tomatoes and stir fry. When the tomatoes have broken down a little add the spinach a handful at a time and wilt. Finally add salt and pepper to taste and serve hot with some torn up basil leaves on the top.

    Used different ingredients. Nice on its own but I added pancetta with the garlic to add a different flavour - 16 Jul 2009
