Bananary chocolate chip muffins

    These muffins are incredibly moist and delicious. This recipe brings together the wonderful combination of banana and chocolate chips in a muffin!

    Makes: 12 muffins

    • 275g self-raising flour
    • 2 tablespoons unsweetened cocoa powder
    • 1/2 teaspoon salt
    • 100g caster sugar
    • 2 eggs
    • 250ml milk
    • 150g unsalted butter, melted and cooled
    • 2 ripe bananas, peeled and mashed
    • 130g dark chocolate chips

    1. Sift flour, cocoa and salt into a large bowl.
    2. In a separate bowl, beat eggs and sugar until light and fluffy. Stir in milk, butter and bananas.
    3. Return flour, cocoa and salt to the sieve and sift into the egg mixture. (The second sifting is necessary). Quickly fold in using a metal spoon (about 15 seconds). Resist the temptation of beating or stirring it.
    4. Fold in chocolate chips. Divide into a 12-hole muffin tin. Bake at 180 C / Gas 4. The muffins are done when a skewer inserted into the centre comes out clean.

    Took shortcuts. very good recipes but you didnt mention when to put the bannas in  -  03 Jul 2011


    Really good recipe. I found it easy to follow, very taste, although a little doughy but everybody in the family seemed to like them like that. The only difference was that I through all the ingredients in at once and mix it up. Worked fine  -  04 Feb 2012
