    About this recipe: These little concoctions are a delectable Christmas treat or food gift.

    Serves: 48 

    • 575g crushed vanilla wafers
    • 75g icing sugar
    • 4 tablespoons best-quality cocoa powder
    • 175g chopped walnuts
    • 3 tablespoons golden syrup
    • 120ml rum
    • additional icing sugar for dusting

    1. In a large bowl, stir together the crushed vanilla wafers, 75g icing sugar, cocoa and nuts. Blend in golden syrup and rum.
    2. Shape into 2.5cm balls, and roll in additional icing sugar. Store in an airtight container for several days to develop the flavour. Roll again in icing sugar before serving.
