Fruit and Nut Raita

    A cooling yoghurt side dish that is perfect when served alongside spicy curries. This version includes plump raisins, cashews, almonds and pistachios.

    Serves: 6 

    • 750g plain natural yoghurt
    • 1 teaspoon caster sugar
    • 1/3 teaspoon salt
    • 2 tablespoons raisins, soaked in boiling water for 20 minutes and drained
    • 2 tablespoons salted cashew nuts, chopped
    • 1 tablespoon flaked almonds
    • 1 tablespoon shelled and chopped salted pistachio nuts

    1. Place yoghurt, sugar and salt in a bowl. Mix well. Add remaining ingredients and mix well. Chill until needed.
