About this recipe: These meatballs are super easy to make. Best served with Mashed Potato - yum!

Serves: 6 

  • Meatballs
  • 1 lb (16oz) minced beef
  • 4 oz uncooked instant rice - rinse the rice under warm water to wash off some of the starch (Uncle Ben's rice works great)
  • 1 large Onion: 1/2 minced & 1/2 sliced
  • 1 Tbs Worcestershire Sauce
  • 1/2 teaspoon garlic powder
  • 1 Tbs dried oregano
  • 6 Tbs (4 oz) bread crumbs
  • 1 egg: beaten
  • Salt & Pepper to taste
  • Sauce
  • 15oz jar of Tomato Sauce (or Frito)
  • 120ml water

Prep:10min  ›  Cook:2hr  ›  Ready in:2hr10min 

  1. Preheat oven to 200c / 350f (gas mark 6)
  2. Mix the beef, rice, minced onion, bread crumbs, worcestershire sauce, egg & seasonings into a large bowl
  3. Form beef mixture into 4 cm size balls and place into a 9 x 13in baking dish
  4. In a smaller bowl mix the tomato sauce & water together. Pour over the meatballs. Add the sliced onion on top.
  5. Cook for 1 hour 45 mins to 2 hours or until the meatballs are fully cooked and browned and the sauce has thickened.
  6. NOTE: If the sauce looks too thick, add another 60ml of water halfway through the cooking.

My Mum used to make these so I was overjoyed to find the recipe. I made my own pasta sauce with ham, mushroom, tomato, garlic and herbs but the meatballs were kind of bland. COuld this be that I used leftover cornbread for the breadcrumbs or I needed a larger onion? Maybe, I will try again. There was nothing wrong with them I just like a little higher taste kick than my first try turned out. - 12 Oct 2011
