    About this recipe: This Chinese-inspired dish is packed full of delicious flavours. It's a cross between a curry and a stir-fry. Pork is cooked with roasted garlic and pineapple in a curry sauce. Enjoy over noodles or rice.

    Ingredients
    Serves: 4 

    • 1kg pork, beef or chicken, sliced
    • 1 (432g) tin pineapple chunks
    • olive oil as needed
    • 5 cloves garlic, peeled
    • 1/2 onion, sliced
    • 1 tablespoon curry powder
    • 1 tablespoon dried thyme
    • 1/2 tablespoon paprika
    • 1/2 teaspoon salt
    • 4 tablespoons soy sauce
    • 1 tablespoon cornflour
    • 75ml water

    Method

    1. Place garlic onto a large sheet of foil. Drizzle with a little olive oil, close the parcel and roast at 190 C / Gas 5 for 15 minutes.
    2. In a large bowl, combine pork, pineapple with juice, onion, curry, thyme, paprika, salt, soy sauce and whole roasted garlic cloves.
    3. Heat 1-2 tablespoons olive oil in a large frying pan over medium-high heat. Add the pork mixture and cook for 10 minutes or until the pork is cooked through.
    4. Meanwhile, in a small bowl, combine cornflour with water and stir until smooth.
    5. Reduce heat to low and add cornflour slurry to the pan. Stir constantly until sauce is thickened.
