1kg pork, beef or chicken, sliced
1 (432g) tin pineapple chunks
olive oil as needed
5 cloves garlic, peeled
1/2 onion, sliced
1 tablespoon curry powder
1 tablespoon dried thyme
1/2 tablespoon paprika
1/2 teaspoon salt
4 tablespoons soy sauce
1 tablespoon cornflour

Place garlic onto a large sheet of foil. Drizzle with a little olive oil, close the parcel and roast at 190 C / Gas 5 for 15 minutes.
In a large bowl, combine pork, pineapple with juice, onion, curry, thyme, paprika, salt, soy sauce and whole roasted garlic cloves.
Heat 1-2 tablespoons olive oil in a large frying pan over medium-high heat. Add the pork mixture and cook for 10 minutes or until the pork is cooked through.
Meanwhile, in a small bowl, combine cornflour with water and stir until smooth.
Reduce heat to low and add cornflour slurry to the pan. Stir constantly until sauce is thickened.
