Curried Pork with Pineapple Stir Fry

    This Chinese-inspired dish is packed full of delicious flavours. It's a cross between a curry and a stir-fry. Pork is cooked with roasted garlic and pineapple in a curry sauce. Enjoy over noodles or rice.

    Serves: 4 

    • 1kg pork, beef or chicken, sliced
    • 1 (432g) tin pineapple chunks
    • olive oil as needed
    • 5 cloves garlic, peeled
    • 1/2 onion, sliced
    • 1 tablespoon curry powder
    • 1 tablespoon dried thyme
    • 1/2 tablespoon paprika
    • 1/2 teaspoon salt
    • 4 tablespoons soy sauce
    • 1 tablespoon cornflour
    • 75ml water

    1. Place garlic onto a large sheet of foil. Drizzle with a little olive oil, close the parcel and roast at 190 C / Gas 5 for 15 minutes.
    2. In a large bowl, combine pork, pineapple with juice, onion, curry, thyme, paprika, salt, soy sauce and whole roasted garlic cloves.
    3. Heat 1-2 tablespoons olive oil in a large frying pan over medium-high heat. Add the pork mixture and cook for 10 minutes or until the pork is cooked through.
    4. Meanwhile, in a small bowl, combine cornflour with water and stir until smooth.
    5. Reduce heat to low and add cornflour slurry to the pan. Stir constantly until sauce is thickened.

    This is yum! A great use for pork chops and opportunity to vary your dinners. Still tastes good even if you don't roast the garlic too and you can give it more pow with some extra turmeric and cumin.  -  03 Dec 2017
