85g wheat bran
5 tablespoons vegetable oil
100g dark brown soft sugar
1/2 teaspoon vanilla extract
125g plain flour
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
1/2 teaspoon salt

Preheat oven to 190 C / Gas mark 5. Grease a muffin tin or line with paper muffin cases.
Mix together wheat bran and buttermilk; let stand for 10 minutes.
Beat together oil, egg, sugar and vanilla and add to buttermilk mixture. Sift together flour, bicarbonate of soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in sultanas and spoon batter into prepared muffin tin.
Bake for 15 to 20 minutes, or until a skewer inserted into the centre of a muffin comes out clean. Cool and enjoy!
We all loved these muffins, easy to make, cheap and because I'm a little obsessive, I've worked out that they're approx 171Kcal per muffin and 1.9g of sat fat if you make 12 from this recipe. Will try substituting some of the sugar for honey next time. - 31 Mar 2010
Excellent recipe-have tried several bran muffin recipes but all turned out heavy and solid. These are lovely and light and I will be making them often....they freeze beautifully too. Made first batch with cranberries and second with apricots. Thanks for sharing such a delightful recipe. - 11 May 2011
