Chocolate Buttercream Icing

Ingredients

Serves: 20 

  • 335g dark chocolate, at least 70% cocoa
  • 450g unsalted butter
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 475g icing sugar
  • 2 eggs

Method

  1. Melt the dark chocolate, and allow to cool slightly.
  2. Place the butter, salt and vanilla in a mixing bowl. Beat with a mixer until very light and airy, about 4 minutes. Add the icing sugar a little at a time while beating on low speed. Mix well, and beat on medium speed for about 4 minutes. Add the eggs one at a time, and beat for 5 minutes more. Add the melted chocolate, and beat 4 minutes.

this is BY FAR the nicest, creamiest buttercream icing I have EVER tasted! Huge quantities, so I halved the recipe and it gave me enough for about 30 large cupcakes - piped on!! FANTASTIC recipe thank you - It's a keeper!! - 16 Apr 2011
