Peanut Stuffed Romano Peppers

    This is a delicious side dish, which is quick and easy to make. Romano peppers are stuffed with seasoned peanut butter and baked to perfection.

    Serves: 6 

    • 6 red Romano peppers, halved lengthways and seeded
    • 200g crunchy peanut butter
    • 1 teaspoon salt
    • 1 teaspoon sugar
    • 2 tablespoons lime juice
    • 1 teaspoon ground coriander
    • 1 teaspoon finely chopped chilli or to taste

    1. Preheat oven to 200 C / Gas 6.
    2. Mix together peanut butter, salt, sugar, lime juice, ground coriander and chilli.
    3. Divide the filling amongst the pepper halves. Bake in preheated oven for 10 to 12 minutes.
