5 tablespoons olive oil
2 onions, chopped
1kg fresh spinach, rinsed and stemmed
handful fresh chopped dill, or 1 teaspoon dried
1 tablespoon fresh chopped parsley, or 1/2 teaspoon dried
salt and freshly ground black pepper to taste
100g uncooked white rice

Heat olive oil in a large frying pan over medium-high heat. Saute onions in the oil until soft and translucent. Add spinach, and cook stirring for a few minutes, then pour in the passata and water. Bring to the boil, and season with parsley, dill, salt and pepper. Stir in rice, reduce heat to low, and simmer uncovered for 20 to 25 minutes, or until rice is tender. Add more water if necessary. (The end result shouldn't be soupy.)
In Greece this healthful dish is traditionally served as a main with fresh lemon wedges to squeeze over the top. You can also serve as a side, if you prefer. This recipe makes 2 mains or 4 sides.
