About this recipe: Grilled chicken with chilli and mint

Serves: 2 

  • 2 chicken breasts
  • 1 red chilli
  • 1 tsp crushed dried chilli
  • 2 cloves garlic
  • 2 pinches saffron
  • 10-20 mint leaves
  • 4 tbsp olive oil
  • 1-2 tbsp lemon juice

Prep:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Cut the chicken into pieces. Whiz the chillis, garlic, saffron, most of the mint, olive oil and most of the lemon juice in a blender. Pour over the chicken and toss, marinate for ½ hour. Fry or grill the chicken and season with salt, lemon and mint. Serve with buttery couscous.
