Cut the chicken into pieces. Whiz the chillis, garlic, saffron, most of the mint, olive oil and most of the lemon juice in a blender. Pour over the chicken and toss, marinate for ½ hour. Fry or grill the chicken and season with salt, lemon and mint. Serve with buttery couscous.
