About this recipe: Lemon, spinach, chickpeas, tomatoes and an array of herbs and spices are combined to create a tasty, filling Indian-style vegetarian stew.

Serves: 4 

  • 1 medium onion
  • 1 inch ginger, grated
  • 2 cloves garlic, crushed
  • 1 hot chilli, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 400g tin chickpeas
  • 400g tin tomatoes
  • 250g spinach leaves
  • Zest and juice of 1 lemon
  • Salt and pepper

Prep:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Fry the onion until softened. Add the ginger, garlic, chilli and spices and fry for a couple of minutes. Add the tomatoes, chickpeas, lemon zest and juice and cook for 5 mins. Add the spinach and cook for about another 3 mins. Season to taste. Serve with Greek yoghurt drizzled over.

I didn't have ground coriander so used fresh. I also added a red pepper. It was delicious - 30 Nov 2014
