Purely Peach Muffins

    In my hurry to use up some peaches, I came up with this muffin recipe. It turned out so good, just like peach crumble in a muffin, that I thought I'd share it with everyone! This is also really good cake! Just increase the baking time to 1 hour at 180C and use 2 loaf tins.

    Serves: 16 

    • 375g plain flour
    • 1 tablespoon ground cinnamon
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 300ml vegetable oil
    • 3 eggs, lightly beaten
    • 350g caster sugar
    • 340g peaches - peeled, stones removed and chopped

    1. Preheat the oven to 200 C / Gas mark 6. Lightly grease 16 muffin cups, or line with paper cases.
    2. In a large bowl, mix the flour, cinnamon, bicarbonate of soda and salt. In a separate bowl, mix the oil, eggs and sugar. Stir the oil mixture into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared muffin cups.
    3. Bake 25 minutes in the preheated oven, until a skewer inserted in the centre of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely.

    Altered ingredient amounts. I cut the oil to 200ml and added some of the peach juice instead. Cut the sugar to 200g and added more peaches, I think about 400g of peaches. Tasted great  -  20 Jul 2010


    These are beautiful muffins. Very light, perfect for breakfast. Also very easy to make  -  10 Jul 2011
