2 teaspoons cornflour
1 teaspoon lemon juice
1/4 teaspoon lime juice (optional)
100-150g caster sugar or to taste
1 teaspoon ground cinnamon

Pour cherries, cherry liquid, sugar and cinnamon into a pan. Gently heat.
Meanwhile, combine cornflour with lemon and lime juice until smooth. Add to the saucepan and stir.
Bring to the boil, stirring constantly until thickened. Turn heat down and simmer for a few minutes. Cool completely before using.
