Farfalle with Italian sausage, tomatoes and cream

    A friend gave this sausage pasta recipe to me a few years back, and my family can't seem to get enough of it. This is a very easy pasta recipe.

    Serves: 6 

    • 350g farfalle pasta
    • 2 tablespoons olive oil
    • 500g Italian sausage, casings removed and diced
    • 1/2 teaspoon red chilli flakes
    • 1 small onion, diced
    • 3 cloves garlic, minced
    • 2 (400g) tins plum tomatoes, drained and coarsely chopped
    • 350ml double cream
    • 1/2 teaspoon salt, or to taste
    • 3 tablespoons minced fresh parsley

    1. Bring a large pot of lightly salted water to the boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
    2. Heat oil in a large, deep frying pan over medium heat. Cook sausage and chilli flakes until sausage is evenly brown. Stir in onion and garlic and cook until onion is tender. Stir in tomatoes, cream and salt. Simmer until mixture thickens, 8 to 10 minutes.
    3. Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

    Yes, yes, yes, yes, MAMA MIA. I did not have any sausage so used chicken instead. Added some tomato puree for that extra tang and liberally sprinkled some Italian seasoning into the mix. Served with some granary bread - delicious.  -  29 Jun 2012


    Very nice. Sainsburys were out of italian sausage so I replaced it with chicken fillet strips and sprinkled with fresh basil instead of parsley - yummy!  -  14 Apr 2012


    Altered ingredient amounts. Slightly reduced cream as it seemed quite a lot,it might also work with creme fraiche  -  19 Dec 2009
