About this recipe: My Mum used to make this frequently when I was growing up. The smell of this takes me back to my childhood...a slice of this after school was a real treat!

Serves: 10 

  • 150g (5oz) soft margarine
  • 150g (5oz) caster sugar
  • 2 eggs
  • 225g (8oz) self-raising flour
  • 75g (3oz) currants
  • 450g (1 lb) jar mincemeat
  • Almonds, to decorate

Prep:10min  ›  Cook:1hr45min  ›  Ready in:1hr55min 

  1. Grease and line with greaseproof paper a 20 cm (8inch) round cake tin. Heat the oven to 160 C/ gas mark 3 / 325 F.
  2. Place all the ingredients, except the almonds, in a bowl and beat for one minute until blended.
  3. Turn into the tin and smooth the top. Arrange the almonds on top and bake in an oven for about 1 ¾ hours until golden brown and shrinking away from the sides of the tin.
  4. Leave to cool in the tin and then remove the paper and store in an airtight container.

Easy to make, I reduced the temp to 150 and only cooked it for 1hr 35min, but that's in a fan assisted oven. left the Almonds off the top as don't like them - 19 Dec 2010


Used different ingredients. This is really good made with brown sugar too. - 22 Dec 2008


Altered ingredient amounts. Left out the currants & added 45 ml of homemade ginger drink. - 09 Sep 2009
