Beef Chilli with Baked Beans

    This is a hearty and delicious Mexican-inspired dish. Beef mince is simmered with kidney beans and baked beans in a chilli-spiced tomato sauce. Serve with rice, jacket potatoes or with tortilla chips.

    Serves: 4 

    • 400g minced beef
    • 1 (400g) tin chopped tomatoes
    • 3/4 (200g) tube tomato puree
    • 1 onion, chopped
    • 1 clove garlic, chopped
    • 1 (415g) baked beans
    • 1 (400g) tin kidney beans, rinsed and drained
    • chilli powder to taste
    • mixed dried herbs to taste
    • 1 tablespoon oil

    1. Heat 1 tablespoon oil in a large pan until hot. Fry mince until nearly all browned. Add onion and garlic. Stir until mince is fully cooked. Drain off any excess fat.
    2. Add tomatoes, baked beans, tomato puree, kidney beans, chilli and mixed herbs. Mix well and bring to a simmer. Simmer for approximately 30 minutes. Adjust seasoning, if required.
