My family have this every year for Burns supper. Leave out the spring onion if you don't like it.
Ingredients

10 medium floury potatoes, peeled and quartered

1 bunch of spring onions, finely chopped

250ml milk

salt and pepper to taste
Preparation method
- Put the potatoes in a large pot and cover with water. Place over high heat, bring to the boil and cook until soft.
- Meanwhile, in a small pan, heat the milk over medium heat. Add the chopped spring onion and simmer till the potatoes are done.
- Drain the potatoes and add the milk mixture along with salt and pepper. Mash altogether until fluffy and smooth. Serve with butter, if desired.
