About this recipe:
This stew is a twist on the classic Scottish dish. It's made by stewing potatoes with beef sausages and onions. It's simple, hearty and is bound to put some meat onto your bones.
4 - 6
2 medium onions, chopped
454g beef sausages
1.5kg floury potatoes, such as maris piper, chopped in half
1 cube beef stock
gravy granules if required

Place onions, sausages, potatoes and stock cube into a large pot. Cover with water and bring to the boil.
Lower the heat and simmer for 1 to 1 1/2 hours or until potatoes are starting to break up. Top up with water if the pot starts to look dry.
The dish is ready when everything is soft and the sauce is thick. Stir in some gravy granules, if the sauce is too thin. Season and enjoy.
Back in 1965 when I was 11 and it was freezing cold outside, my mam knew just how to warm us up with a great big pan of Stovies on the stove, it was so thick you could stand a spoon up in it, Sadly mam has gone now and I make it for just me but it never tastes the same really!
