    About this recipe: My family loves these as a side dish or for Sunday brunch. Delicious served with tomatoes and topped with soured cream and spring onions.

    Serves: 4 

    • 5 potatoes, peeled and grated
    • 2 eggs, beaten
    • 1 onion, finely chopped
    • 3 tablespoons plain flour
    • salt and pepper to taste
    • 3 tablespoons vegetable oil

    1. In a large bowl, stir together potatoes, eggs, onion, flour, salt and pepper.
    2. In a large frying pan, heat oil over medium high heat. Drop large spoonfuls of the potato batter into the pan and flatten cakes slightly with a spatula. Cook for about 4 minutes on each side, until golden brown. Serve immediately.
