Spicy winter vegetable soup
A delicious vegetarian soup, which is perfect for the cold winter months. It's a smooth pureed soup, made with root vegetables and seasoned with cayenne pepper and herbs.
Ingredients
Serves: 4 - 6
- 1 parsnip, peeled and cut into large chunks
- 2 carrots, peeled and cut into large chunks
- 1 sweet potato, peeled and cut into large chunks
- 1/2 turnip, peeled and cut into large chunks
- 2 cubes vegetable stock
- 1 medium onion, finely chopped
- 3 cloves garlic
- 100ml double cream
- olive oil
- cayenne pepper to taste
- freshly ground black pepper to taste
- dried mixed herbs to taste
- chilli powder to taste

- Bring a large pot of salted water to the boil. Add 1 teaspoon oil, parsnip, carrots, sweet potato and turnip. Boil until fork tender. Drain and set aside.
- In the same pot, bring 600ml water to the boil with stock cubes. Add cayenne, black pepper, herbs and chilli powder.
- Meanwhile, fry onions and garlic in oil until soft and golden.
- Add onions and drained vegetables to the stock pot and simmer for 10 minutes.
- Remove from heat. Blend soup with a hand blender until smooth. Add double cream and stir through.
