With a fork, mash the avocados and add the chopped onions, chillies and coriander; mix well. Add about 2 tablespoons of lime juice to the mashed avocado mixture, along with sea salt and black pepper to taste.
If kept in fridge, wrap with the clingfilm touching the mixture - this reduces chances of it going brown. Also the chilli heat increases if left in fridge.
