Zesty fresh guacamole

    A healthy, refreshing accompaniment to chilli con carne, nachos and tacos. Made with warm red chillies and a zesty lime.

    Serves: 8 

    • 2 ripe avocados, stones removed
    • 1 shallot or 1/4 a red onion, chopped
    • 1 or 2 red chillies, seeded and chopped
    • 1 tablespoon finely chopped coriander leaves
    • 1/2 a lime
    • generous pinch sea salt
    • black pepper to taste

    1. With a fork, mash the avocados and add the chopped onions, chillies and coriander; mix well. Add about 2 tablespoons of lime juice to the mashed avocado mixture, along with sea salt and black pepper to taste.
    2. If kept in fridge, wrap with the clingfilm touching the mixture - this reduces chances of it going brown. Also the chilli heat increases if left in fridge.
