About this recipe: A super easy recipe for a very healthy grab-and-go breakfast! Basically you can play around with it quite a lot and it seems fairly forgiving!

Serves: 6 

  • 30g butter (or margarine if that's your thing!)
  • 80g honey (runny)
  • 20g sugar (brown tastes good)
  • 50g peanut butter
  • 75g protein shake powder (strawberry/chocolate)
  • 100g muesli (super fruity/nutty variety)
  • 50g rolled oats (or porridge oats)
  • 50g almonds (or your favourite nut mixture)
  • 1 medium egg

Prep:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Preheat the oven to 200 C / Gas mark 6.
  2. In the microwave, in a small bowl melt the butter, honey, sugar and peanut butter. In a large bowl, mix together the protein shake powder, muesli, oats and nuts. Stir the wet ingredients into the dry ingredients and mix in the egg. (Add more honey or oats if the mixture looks too dry/wet at this point.)
  3. Pat mixture into a baking dish and bake in the preheated oven for 15 minutes, until golden brown on top.
  4. Cut into breakfast sized portions while hot then leave to cool. In the morning grab a bar, stick it in the microwave for 10 seconds and you're good to go!

I started with this recipe and experimented until I got it just the way I like it!
