About this recipe: Toddler and baby dinner containing sweet potato, peas, peppers and chicken breast, served in a fun way after the eldest love of mickey mouse.

Serves: 2

  • 2 chicken breasts, defrosted
  • dried parsley to taste
  • black pepper to taste
  • large handful of frozen garden peas
  • 1 sweet potato, peeled and cubed
  • 1/4 red pepper
  • 1/4 green pepper
  • 4 raisins or sultanas
  • fresh chives

Prep:10min  ›  Cook:30min  ›  Ready in:40min

  1. Season chicken with parsley and pepper to your liking - I use a sprinkle of each. Add chicken to steamer and cook for 27 minutes. Add sweet potato and cook for 20 minutes. Add peas and cook for 17 minutes. (Alternatively, cook sweet potato and peas in separate pans of boiling water until tender, then drain.) Mash the sweet potato.
  2. Spoon peas onto a plate and chop 2 sticks of green pepper and scatter on middle of plate to create 'grass'. Make the shape of a mouse body with the mashed potato and place on top of 'grass'. Add raisins as eyes and cut a long slice of red pepper add as a tail and chop strip of red pepper into four chunks for ears. Add fresh chives for whiskers. Cut chicken breast into triangles chunks for the 'cheese' and place on plate. Enjoy :)

Cook's note

Recipe uses Intellisteam, which cooks all the veg to end at the same time, life saver with two young children, but you could easily cook them in a differant way but would advise to steam the chicken as it makes it moist and delicious and my girls love chicken cooked this way.

Eldest not so keen on sweet potato, so sometimes use normal potato and use peas and sweetcorn for 'grass', with carrot for 'tail' and two pieces of broccoli for 'ears' and have gravy 'rain'. (Will upload a photo next time I cook this to help with preparation in case unclear on anything.)
