Yummy Carrot Cake

    This is very easy and very moist, once made it will become a family favourite. Just double up the ingredients to make 2 (put 1 in the freezer if you can). I sometimes lightly toast some pecans and put them chopped on the icing.

    Serves: 8 

    • 200g sugar
    • 125g self raising flour
    • 1/4 tsp salt
    • 1 tsp baking powder
    • 125ml oil
    • 1 tsp cinnamon
    • 1/2 tsp allspice
    • 2 eggs
    • 110g grated carrot
    • Icing
    • 30g butter or margarine
    • 120g icing sugar
    • 50g cream cheese
    • 1/2 tsp vanilla essence

    Prep:15min  ›  Cook:50min  ›  Ready in:1hr5min 

    1. Sift all dry ingredients.
    2. Add oil and stir well (this will be a stiff mix)
    3. Add eggs one at a time and mix well
    4. Add carrots ...and mix
    5. Place in tin, I use a loaf style tin.
    6. Bake in pre-heated oven for 50-60 minutes gas mark 5.

    Used different ingredients. 3rd time I used same amount of brown sugar and turned out very moist and good and the color's great.  -  19 Sep 2009


    Cake came out perfect. Great tasting and very moist. I used light brown sugar, and only put 150g in..  -  28 Apr 2012


    Altered ingredient amounts. OK, second time I made it I used oil and it was so much better: moist and soft. A friend of mine suggested I should use a part of brown sugar, has anyone tried that?  -  17 Sep 2009
