Rua's Drop Scones

    These are delicious for breakfast or lunch. Serve them immediately with butter, jam or honey.

    Serves: 4 

    • 225g (8 oz) self raising flour
    • 1/2 teaspoon salt
    • 1 tablespoon caster sugar
    • 1 egg
    • 300ml (1/2 pint) fresh milk
    • butter for frying
    • butter, jam or honey to serve

    1. Sift flour and salt into a bowl. Add sugar. Mix to a smooth creamy batter with the egg and 150ml milk. Stir in the remaining 150ml milk.
    2. Brush a heavy frying pan with melted butter. Heat.
    3. Drop small rounds of scone mixture from a spoon or small ladle into the pan. Reduce the heat to medium.
    4. Cook until bubbles begin to show on the surface. (Approx 2 minutes.) Carefully turn over and cook for a further 1 - 2 minutes.
    5. Pile scones in a clean, folded tea-towel to keep warm and moist. Serve immediately with butter, jam or honey.

    the texture of these pancakes is wonderful but it lacks flavour. One feels like eating flour. Does a great base for apple or banana pancakes,though. TO the second batch I added a mashed banana and it was great  -  20 Mar 2010


    A really super quick and easy recipe and an almost clean pan afterwards.I added some plump sultanas and a pinch of mixed spice to mine and they were gorgeous.Just served with a dollop of plain yoghurt and a drizzle of honey.Kids love them too.  -  15 Feb 2015


    Quick,easy basic recipe. I added mixed spice and dried fruit, served with maple syrup. Hubby loved them.  -  25 Aug 2016
