Heat up the oil to a medium heat. Add garlic and fry till golden. Add the chopped up carrot to the garlic and fry for 3-4 minutes then add the spring onion. Fry for a further minute then add the egg and stir into the vegetables.
When the egg is cooked add the cooked rice and combine with the vegetables and egg.
Used different ingredients.
Added sliced mushrooms, frozen garden peas, frozen sweetcorn, sauteed red pepper & a drizzle of toasted sesame oil. You can also add cubed Bacon grill & prawns for a more substantial main course. - 20 Feb 2010
Great recipe - quite suprised someone else found this challenging!! I think getting your wok hot is the key though - did this with vegetable and cashew nuts main dish, delicious. Thanks! I lost my fried rice recipe a while back, this is ace - 27 Oct 2011
