Top and tail the courgettes. Slice courgettes lengthways (about 1-1.5mm thick). Place in a shallow baking dish, each overlapping about half the width of the one below. Drizzle with olive oil. Sprinkle with a teaspoon of mixed herbs. (If you have an olive oil with mixed herbs drizzle with this instead.)
Place in oven at 200C for 30 mins. Remove and sprinkle grated cheddar cheese over. Return to oven, bake for a further 10/15 mins until cheese is soft and bubbly. Some cheese will melt to the side of the courgettes and become crispy. Serve.
