Organic Mini Lamb Burgers

    For a complete healthy and tasty meal, serve with Ebly wheat or rice with diced carrots and courgettes. Also makes a great sandwich filling with cheddar cheese in fresh baguette...ideal for kids and greedy adults!! Use organic products for a nicer and tastier result.

    Serves: 4 

    • 500g minced lamb
    • 1 finely chopped white onion
    • 2 crushed garlic cloves
    • 2 tbsp virgin olive oil
    • 2 tbsp chopped fresh parsley
    • 1 tbsp mint (dry or fresh if you prefer)
    • 1 tbsp Tabasco sauce
    • Salt, black pepper
    • 1 egg or 1 egg yolk + 1 tsp milk

    1. Cook the onion and crushed garlic in olive oil until soft and golden. Set aside to cool down.
    2. In a mixing bowl add the meat, herbs, Tabasco and cold onion/garlic. Season well with salt and black pepper.
    3. Add the egg mix to bind the ingredients together and stir well by hands.
    4. Form meatballs (approx. the size of a golf ball) and flatten into the shape of a burger with the palm of your hands.
    5. Heat up a pan with a bit of olive oil at medium-high temperature and cook the mini burgers for approx. 10 min, turning them over every 2-3 min.Serve immediately.

    Very easy to put together, but we weren't impressed. Very little flavour, despite the fresh herbs and they were very dry. A little tweaking and they'd probably be a handy fall-back recipe though.  -  14 Mar 2013
