Square slice sausage

    A Scottish square sausage, usually served in a roll for breakfast.

    Serves: 12 

    • 450g (1 lb) minced beef
    • 450g (1 lb) minced pork
    • 170g (6 oz) toasted breadcrumbs
    • 1 teaspoon salt
    • 1 teaspoon white pepper

    Prep:15min  ›  Cook:8min  ›  Extra time:4hr chilling  ›  Ready in:4hr23min 

    1. Use hands to mix beef and pork. Then mix in toasted breadcrumbs. Add salt and pepper.
    2. Line a 2 lb loaf tin with cling film. Place ingredients into tin. Refigerate for 4 hours.
    3. Cut loaf into square slices. Grill or pan fry.

    Quite bland, I always add about 1 tsp dried coriander and a pinch of nutmeg to the mixture. Gives it a more traditional taste.  -  19 Nov 2012
