    Rich chocolate fairy cakes with cream cheese and chocolate centre.

    Serves: 24 

    • 375g plain flour
    • 375g caster sugar
    • 50g best quality cocoa powder
    • 1 teaspoon salt
    • 2 teaspoons bicarbonate of soda
    • 160ml vegetable oil
    • 500ml water
    • 2 tablespoons vinegar
    • 2 teaspoons vanilla extract
    • 1 (200g) tub cream cheese, softened
    • 1 egg
    • 75g caster sugar
    • 1/4 teaspoon salt
    • 170g chocolate chips

    1. Preheat the oven to 180 C / Gas mark 4. Line 24 muffin cups with paper cases.
    2. In a large bowl, mix together flour, 375g sugar, cocoa, 1 teaspoon salt and bicarbonate of soda. Stir in oil, water, vinegar and vanilla until blended. Pour mixture into prepared muffin cups, filling each 2/3 full.
    3. To make the filling: In a medium bowl, beat together the cream cheese, egg, remaining sugar and salt until light and fluffy. Stir in chocolate chips. Drop a heaping teaspoonful of the cream cheese mixture into each fairy cake. Bake in the preheated oven for 25 minutes. Allow to cool.

    This is a really easy recipe, enjoyed by all. quite heavy, (i made it in muffin cases)! but very moist and delightful. read the recipe through befor starting and you should have no trouble.  -  03 Nov 2010


    This recipe is confusing. I made this today and after combining all the dry ingredients it then called for left over sugar (which all went into dry mixture. However, the creamcheese filling does not work. All my cakes came out tasting like undercooked eggs. I tried them at a higher temp for 40 mins and they were still not cooked so I just gave in and threw them all in the bin. Won't be doing these again!!  -  15 Mar 2010
