Indian Green Curry

    Yummy curry I came up with after trying to replicate a dish I had at my favourite indian resteraunt. It doesn't taste much like it but its still pretty good I think!

    Serves: 2 

    • 2 medium sized chicken breasts
    • 1 large green bell pepper
    • 1 red onion
    • 1 medium sized potato
    • 2 green chilli's (vary according to taste)
    • 1 tsp black pepper corns
    • 2 cardammon pods
    • 1 clove garlic
    • 1 tsp ground cinnamon
    • 1 tsp ground turmeric
    • 1 tsp ground cumin
    • 20g butter
    • 2 tsp oil
    • 2 tbs natural yoghurt
    • 400g can coconut milk

    1. In a large wok melt the butter and add oil add the finely sliced chilli's and garlic, peppercorns, cardammon and spices. Stir-fry the diced chicken breasts in the mixture untill covered fully and starting to brown
    2. Add the potato, onion and pepper all diced, stir fry for a further 5 mins
    3. Add the coconut milk and stir in thoroughly, reduce heat and leave to simmer for 30 mins stirring occasionally, untill sauce is thickened
    4. Add the yoghurt and stir in, remove from heat immediatley or yogurt will start to seperate.
    5. Serve with naan, rice and your favourite indian chutneys
