Fatless sponge

    This was my mother's recipe. She was in service in various large houses in Suffolk. I make it in the summer with fresh whipped cream with strawberries, in the winter with jam and cream, and for my husband with jam/fruit and whipped CremoVita (dairy-free cream)

    Serves: 6 

    • 4 eggs
    • 60g (2 oz) plain flour
    • 35g (1 1/4 oz) cornflour
    • 1 level teaspoon baking powder
    • 170g (6 oz) caster sugar

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Separate eggs. Whisk egg whites. Whisk in sugar.
    2. Whisk yolks. Whisk all together.
    3. Fold in flour, cornflour and baking powder.
    4. Divide between two 20cm (8") tins.
    5. Bake at 180 - 190 C / Gas 4 - 5 for 20 minutes.

    This makes a lovely light cake, that looks just like the picture. I have now made it a number of times and it has worked every time, I have also added cocoa powder to make a chocolate version. My family all love it.  -  15 Jun 2012

    this recipe is great came out as light as a feather , filled it with strawberries and coated all over with vanilla buttercream gorgeous , didn't last long !!  -  30 Jun 2014
