Spain On A Plate

    My boyfriend christened this and I think it's a pretty accurate description, chorizo, olives, peppers and potatoes always remind me of holidays in Spain. With the addition of the eggs it's almost like an inside out Spanish omlette.

    Serves: 2 

    • 1 tbs olive oil and extra to serve
    • 1/2 red onion, diced
    • 75g chorizo, diced
    • 1 large potato, diced
    • 1 red pepper, de-seeded and diced
    • 8 black olives, pitted and sliced
    • 200g can of chopped tomatoes
    • 2 large eggs

    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Preheat the oven to 200c. Meanwhile heat the oil in a large ovenproof pan, add the onion and fry for 5min untill soft. Stir in the chorizo and potato and cook untill the juices are released.
    2. Stir in the red pepper, olives and tomatoes, bring to a simmer with a splash of water. Transfer to the oven for 20 mins or until the potato is cooked through.
    3. Remove from the oven and make two wells in the mixture, carefully crack the eggs into the wells and return to the oven for 3 mins or until eggs have set.
    4. Serve with a drizzle of olive oil.

    Had a dish very like this in Spain, can't remember what they called it but it had all the ingredients listed here in it. I make this quite often & it takes me right back to the sun.  -  16 Sep 2010


    Used different ingredients. I only made a change because I don't like olives. I used 8 small cubes of feta cheese in their place. Not so Spanish but worked really well with the other ingredients.  -  12 Apr 2010
