About this recipe:
Despite their name, these buns aren't like rocks. They are tender, lightly spiced and packed full of fruity goodness. Enjoy with a big mug of tea.
Makes: 10 - 12, depending on size
225g plain flour
1 teaspoon baking powder
1/2 teaspoon mixed spice
85g caster sugar
30g cut mixed peel
1 pinch salt
1 pinch ground nutmeg
1 egg, beaten
milk as needed
caster sugar for sprinkling
- Preheat oven to 220 C / Gas 7.
- Sieve flour, salt and baking powder into a bowl. Rub in butter until mixture resembles breadcrumbs. Stir in sugar, mixed peel, mixed spice, nutmeg and raisins.
- Mix in egg and enough milk to form a very stiff batter. Using two forks, pile mounds of the mixture onto a greased baking tray.
- Bake in preheated oven for 20 minutes or until a skewer inserted into the middle of the rock bun comes out clean. Immediately sprinkle with sugar and let cool.
wow-since reading this recipe i have made them millions the whole family loves them!There so easy to make aswell! You don't need to plan anything out its just amazing-they are fab!

great recipe,just making some and adding treacle and diced cherries for the xmas effect,proper job :-)
