About this recipe: Despite their name, these buns aren't like rocks. They are tender, lightly spiced and packed full of fruity goodness. Enjoy with a big mug of tea.

Ingredients
Makes: 10 - 12, depending on size

  • 225g plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon mixed spice
  • 85g caster sugar
  • 85g raisins
  • 30g cut mixed peel
  • 1 pinch salt
  • 85g butter
  • 1 pinch ground nutmeg
  • 1 egg, beaten
  • milk as needed
  • caster sugar for sprinkling

Method
Prep:20min  ›  Cook:20min  ›  Ready in:40min 

  1. Preheat oven to 220 C / Gas 7.
  2. Sieve flour, salt and baking powder into a bowl. Rub in butter until mixture resembles breadcrumbs. Stir in sugar, mixed peel, mixed spice, nutmeg and raisins.
  3. Mix in egg and enough milk to form a very stiff batter. Using two forks, pile mounds of the mixture onto a greased baking tray.
  4. Bake in preheated oven for 20 minutes or until a skewer inserted into the middle of the rock bun comes out clean. Immediately sprinkle with sugar and let cool.
