Peel and chop the apples and mix in with the sausagemeat, press the garlic and along with the herbs and seasoning, mix in a mixing bowl.
Roll out the pastry to about 5cm (2 in) wide and 38cm (15 in) long. Take a portion of the sausage mix and with floured hands begin to roll, then place onto pastry. Brush the edge of the pastry with beaten egg, then roll over the pastry over the meat and secure the edges. Cut the roll into 5cm (2 in) lengths, scoring on the top, then brush with the beaten egg.
Bake for about 25 minutes in a preheated 180 C / Gas 4 oven.
