Heat oil in the wok to a high temperature, add garlic slices and cook them until they are light brown. Then add minced pork to the dish. Stir in the fish sauce, sugar and lime juice.
Stir fry until the meat is cooked. Spread the meat evenly across the wok, add eggs on top of meat. Using a spatula, break the egg yolk and spread them on top of meat. At this point, don't stir or turn the meat over. Let the egg sits for about a minute and then using spatula turn over the meat with egg on top. So now the egg will cook at the bottom.
After the egg is cooked, break apart the meat, and turn them over again. This time, transfer to a serving dish, and garnish them with chopped spring onion. Serve with Jasmine Rice.
Usually I blend pork and eggs together, and pan fry all of them. This time, I followed the cook method of the original recipe, cooked the pork first then added the egg, and I felt they worked better in this way! It is a very easy and delicious dish, I like it! - 24 Apr 2009
really awful recipe,very mismatched combo. fish sauce made it far to salty, and smelt the whole house for hours afterwards .2 tablespoons i think should say teaspoons. none of us ate it it was quite vile. would not make it again yuk
