Spicy vegetable parcels

    This is something fairly healthy that my older children love, it's also a great way of getting rid of any leftover vegatables you have.

    Serves: 6 

    • 2 potatoes. peeled and diced
    • 2 medium carrots, peeled and diced
    • 150g peas
    • 150g sweetcorn
    • 1 onion
    • 1 pack of frozen pastry or make your own
    • 2 tsp cayene pepper
    • 2 tsp curry powder or as much as you like
    • 2tsp paprika
    • 3 tbsp mixed herbs
    • 1 vegetable oxo cube
    • 1 egg beaten

    1. Preheat oven to gas mark 6.
    2. Mixed together all the vegetable in a large bowl, cover with herbs, spices, curry powder and oxo cube. put into fridge for 10 mins.
    3. On a lightly floured surface roll out pastry about .5cm thick, cut into medium square shapes. Spoon in the vegetable mixture in the middle. Coat the edge cover with egg. Bring the side of each parcel in to the middle, again with top and bottom to the middle.
    4. Place with wrapped bit on the bottom of a lightly greased tray, coat parcel with egg,
    5. cook for 25 mins or until golden brown.
