Garlic and Lemon Chicken Drummers

    This is a super-cheap dish, which is perfect as a starter or part of a main course. Roasted chicken drumsticks are drenched in a lemon, garlic and parsley butter. This recipe also works well with chicken wings or chicken thighs.

    Serves: 4 

    • 12 chicken drumsticks
    • 1 tablespoon olive oil
    • 60g butter, melted
    • 25g flat-leaf parsley, chopped
    • 1 lemon, zest grated and juiced
    • 3 cloves garlic, finely chopped

    1. Preheat oven to 200 C / Gas 6.
    2. Place drumsticks in a greased shallow roasting tin.
    3. Mix together oil and 1/4 of the melted butter. Drizzle over drumsticks. Season with salt and pepper. Toss to coat.
    4. Roast drumsticks for 35 to 40 minutes or until golden and cooked through. Remove from oven.
    5. Combine remaining butter, parsley, lemon zest, 4 tablespoons lemon juice and garlic in a bowl. Spoon over chicken. Cover. Stand for 10 minutes. Serve.
