Rachels' Cocoa Cake

    This is my favourite dark chocolate cake. It is deep and rich and slightly chewy on the top.

    Serves: 8 

    • 6oz Butter
    • 6oz Caster Sugar
    • 3 Eggs
    • 4 tbsps Golden Syrup
    • 2oz Ground Almonds
    • 2oz Cocoa Powder
    • 6oz Self Raising Flour

    1. Preheat the oven to gas mark 2 and prepare an 8 inch round tin.
    2. Cream butter and sugar until light and fluffy, gradually beat in the eggs, thoroughly stir in golden syrup, almonds and cocoa. Carefully fold in flour. To make a soft dropping consistency.
    3. Spoon into tin and bake for 2 hrs until firm and springy to the touch. Turn out onto wire rack. Invert cake tin over the cake and leave to cool.

    Altered ingredient amounts. Double up the Ingredients to make 2 cakes to make good use of the oven as it is baking for 2 hours  -  02 Mar 2009
