About this recipe: This turkey dish is incredibly delicious. Turkey steaks are pan-fried with mushrooms and garlic, then served over wild rice with a creamy cheese and pesto sauce.

Serves: 4 

  • For the Turkey
  • 1 tablespoon olive oil
  • 4 turkey steaks
  • 3 cloves garlic, finely chopped
  • 12 button mushrooms, sliced
  • For the Sauce
  • 1 tablespoon plain flour
  • 1 1/2 teaspoons butter
  • 425ml semi-skimmed milk
  • 25g mature Cheddar cheese, grated
  • salt and pepper
  • 1 tablespoon basil pesto
  • cooked wild rice to serve

Method

  1. Heat olive oil in large frying pan over a medium heat, add turkey steaks. Fry for 5-6 minutes per side, depending on the thickness. Stir in mushrooms and garlic.
  2. Meanwhile, make the sauce. Melt butter in a small pan over a medium heat. Add flour and stir to form a smooth paste. Gradually add milk, stirring constantly until the sauce thickens. Season with pesto, salt, pepper and cheese.
  3. Serve turkey with mushrooms and sauce over wild rice.

The proportions for the sauce seem to be incorrect. If I made it again, I would add more flour and butter, otherwise the sauce will not thicken. It tastes quite nice, but I wasn't crazy about it. Maybe more pesto and cheese for more flavour? - 02 Feb 2015
