Roasted Mint and Lemon Veg

    The mint and lemon are a surprisingly delicious combination and make the veg fresh and a little bit tangy.

    Serves: 1 

    • 3 carrots, (and whatever other veg ya want)
    • 4 cloves of garlic
    • 2 tbsps olive oil,
    • onion seasoning (or onions but I hate chopping them so this is a great alternative),
    • mint,
    • black pepper,
    • juice of 2 slices of lemon,
    • mixed herbs.

    Prep:10min  ›  Cook:35min  ›  Ready in:45min 

    1. Chop the carrots in half and slice lengthwise.
    2. Press the garlic so it's not completely crushed but just a bit seperated.
    3. Place in a baking tray or dish.
    4. Sprinkle over the rest of the ingredients and mix it all up with your hands.
    5. Place in the oven at 200c and cook for half an hour to 40 minutes, stirring every ten minutes.

    The lemon on the veggies was a surprisingly lovely twist. The veggies were still a little firm so needed a little extra time.  -  12 May 2018
