    About this recipe: This is fast, delicious and very versatile. You can add pretty much anything to the sauce that isn't too strongly-flavored. I love putting in deep-fried tofu and a selection of veggies like mushrooms, carrots, mange tout and spinach, but you can add chicken, beef, firm-fleshed fish, prawns... anything! This recipe makes for a dish with a spicy kick, if you prefer mild food, reduce the amount of chillies. The sauce itself is vegan, so if you add tofu, you can have a delicious vegan meal.

    Ingredients
    Serves: 4 

    • 1 small onion
    • 4 small chicken breasts, or equivalent quantity of tofu, beef, fish, prawns, or a combination!
    • vegetables, such as mushrooms, carrots, mange tout, sweetcorn, peas
    • Curry Sauce
    • 1 tin of coconut milk
    • 6 tbsp fresh coriander leaves
    • 1/2 tsp coriander powder
    • 1/4 tsp cumin powder
    • 1/4 tsp powdered ginger
    • dash of soy sauce
    • 2 cloves garlic, crushed
    • 2 small green chillies, seeded and chopped
    • juice and zest of 1 lime

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Curry Sauce: Place all of the ingredients for the sauce into a blender and blend!
    2. Cook other ingredients, stir fry onions and meat (if using) then add the veg and cook for 2-3 minutes.
    3. Pour in the curry paste and simmer for 20 mins, or until all ingredients are cooked and have absorbed the flavor of the sauce.
    4. Serve with basmati rice.

    Lovely! I did tweak the recipe slightly as I added some fresh Lime zest and fresh ginger. I also made my own thai inspired turkey meatballs to have with it instead of chicken. - 09 Nov 2014
