Chicken in tarragon cheese sauce

About this recipe:
Succulent cubes of chicken are served with a tarragon and mustard flavoured cheese sauce. Enjoy with potatoes, rice or pasta.
2 tablespoons olive oil
500g skinless chicken breast fillets, cubed
150ml white wine
2 cloves garlic
2 tablespoons dried tarragon
1 lemon, zest grated
250ml extra-thick double cream
100-150g extra-mature Cheddar cheese
2 heaped teaspoons wholegrain mustard
- Heat oil in a pan until hot. Quickly brown the chicken on all sides.
- Stir in white wine, garlic, tarragon and zest. Lower heat and simmer for 15 minutes.
- Increase the heat slightly and add cream, stirring continuously.
- Add Cheddar and stir until melted. Add mustard and cook for 5 minutes more, stirring continuously. Serve.
