The VERY BEST No Fat Spicy Lentil Soup

    I've recently lost 3 stone while eating to my heart's content! I just want to share some of the recipes that you can pig out on with a clear conscience .... Huge portions = Huge results!

    Serves: 4 

    • 1 tablespoon fresh grated ginger (to taste if using dried)
    • 1/4 teaspoon ground cumin and chilli powder
    • 1/2 teaspoon curry powder and ground coriander
    • 2 onions, finely chopped
    • 1 parsnip, chopped
    • 1 stick celery, chopped
    • 4 large carrots, chopped
    • 85g (3 oz) split red lentils
    • 25g (1 oz) long grain brown rice
    • 600ml (2 pints) vegetable stock
    • water

    Prep:10min  ›  Ready in:10min 

    1. In a warm (not hot) pan warm through ginger, cumin, chilli powder, curry powder and coriander.
    2. Add the vegatables and stock and cook for 10 mins before adding the lentils and rice.
    3. Cook for 30 mins ( but keep an eye on the pan) as the lentils soak up the water quite quickly and you don't want it to cook dry.
    4. Pulp the soup using a hand held blitzer or a potato masher
    5. Depending on how sweet your carrots are you might need to sweeten a little (I use 1-2 sweetener tablets).

    Gorgeous. You would never know there is no fat - washing up easy too! The second time I made it, I added some left over spinach and that was good as well.  -  10 Nov 2015


    This was delicious. Didn't have a parsnip so added a sweet potato instead and some herbs de Provence to taste. Yum.  -  28 Sep 2014
