Creamy Chicken and Broccoli Bake (Super Low Fat)

    This is a strange one...but trust me! There are some wierd ingredients but it really works and you'll never think it's virtually no fat!

    Serves: 3 

    • 225g / 8oz Broccoli florets
    • 3-4 skinned chicken breast portions
    • 1 can Campbell's low fat condensed chicken soup
    • 50g / 2oz Hellmans Extra Light Mayonnaise
    • 1 tsp curry paste
    • Splash of skimmed milk

    Prep:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Cook broccoli in boiling water until almost tender.
    2. Place chicken breasts and broccoli in a shallow oven proof dish.
    3. Mix together the soup, mayonnaise, and curry paste with a splash of skimmed milk (to double cream consistency).
    4. Spoon the mixture over the chicken and broccoli, coating them well.
    5. Bake at 190C / 375F for 45 mins or until bubbling all the way through.

    Altered ingredient amounts. added peas and mushrooms and cauliflower and also because i didn't think the one tin of soup was enough i added 100ml of water with a chicken stock and it was delicious!  -  29 May 2010

    Was nice, I didnt have any curry paste so i added Garam Masala - wont do that again! Will try tarragon and skipping the curry paste next time, I reckon that will be a good result. Also I used one can of condensed soup to one half a can of skimmed milk ... the consistancy was good.  -  28 Mar 2011
