Maryanne's Chicken with Cheese and Pears

    I wanted to make something a little different for a family Saturday meal and remembered I had cooked something similiar for a dinner party many years ago. I could not find the old recipe so made this one up instead. It worked really well with the side dish of home made croquettes and really didn't take long to prepare or cook.

    Serves: 3 

    • 3 chicken breasts, skinned
    • 3 slices of parma ham
    • 60g (2 oz) of feta cheese
    • salt & pepper to season
    • bunch of spring onions
    • teaspoon of fresh grated ginger
    • 2 firm pears, peeled, cored and cut into quarters
    • 4 leeks
    • 1 stick of celery
    • 300ml (1/2 pint) of chicken stock
    • a little olive oil for sealing
    • a knob of butter

    1. Preheat the oven to 180 C / Gas 4.
    2. Cut a pocket into the chicken breasts and fill with the feta cheese. season with salt and pepper. Wrap the parma ham around the chicken and seal the chicken pockets by lightly frying in the olive oil along with the spring onions.
    3. Cut the celery and the leeks and place in a casserole dish with the nob of butter and a little salt and pepper.
    4. Put the chicken pieces on the top. Fry the pears and the grated fresh ginger in the oil and chicken juices for about 2 minutes and pour over the chicken.
    5. Finally pour the stock over the casserole, cover and cook until chicken is tender.
    6. Drain the juices into a saucepan, thicken with a little cornflour and drizzle over the chicken after serving
    7. Serve chicken and pears on the bed of leeks with home made croquettes to accompany.
