Vegetarian chilli

    This is a great base recipe, and meat eaters will never guess it's vegetarian!

    Serves: 6 

    • 350g packet Quorn mince
    • 2 (400g) tins black beans, rinsed and drained
    • 2 (400g) tins red kidney beans, rinsed and drained
    • 1 (400g) tin borlotti beans, rinsed and drained
    • 2 (400g) tins chopped tomatoes
    • 340ml (12 fl oz) tomato juice
    • 5 onions, chopped
    • 3 tablespoons chilli powder
    • 1 1/2 tablespoons ground cumin
    • 2 clove garlic, minced or 1 tbsp garlic powder
    • 2 bay leaves
    • salt and freshly ground black pepper to taste

    1. Combine all ingredients in a large pot. Bring to a simmer and cover. Let the chilli simmer for at least 1 hour before serving.

    Altered ingredient amounts. * Add tomato puree to give more flavour * Directions for chilli powder, add to taste! * Cut down ingredients, this could feed 12!  -  12 Jan 2011


    3 Tbs of chilli powder was too hot for me, so i would suggest maybe 2 and adding more to taste, rather than it end up being too hot and ruining the whole dish. Also I have a family of 6 and it fed us all twice so i would also suggest cutting back the amount of ingredients as it could have easily gone to waste... I would also suggest adding some tomato puree rather than the tomato juice to add more of a tomato flavour... Other than that, great recipe, would definitely make again how ever with these minor adjustments!  -  12 Jan 2011


    Excellent recipe, i was getting fed up of mince meet, too fatty/grissly/costly etc but using Quorn has totally revitalised it for me. I am now a convert and will never go back to mince meat again  -  02 Nov 2010
